Проращивание зерна в оптимизированных условиях предполагает применение на стадии замачивания ферментных препаратов целлюлолитического (целлюлаза, ксиланаза, β-глюканаза) и амилолитического действия в концентрации 0,005 % в течение 3 ч, причем для получения проростков пшеницы наиболее эффективными из исследованных препаратов являются Вискоферм (Novozymes, Дания) и Комплиферм (Институт микробиологии НАН Беларуси), для получения проростков гороха – Вискоферм (Novozymes, Дания). В результате ферментативной обработки длительность процесса проращивания зерна пшеницы по сравнению с контролем сокращается в среднем на 2–4 ч, семян гороха – на 4–5 ч. Применение данной технологии позволяет увеличить выход проростков и повысить рентабельность их производства.</p></abstract><trans-abstract xml:lang="en"><p>The regimes were grounded for enzymatic treatment of food wheat and peas grain to intensify seedling production. Optimization of grain germination process envisages application at the steeping stage of cellulolytic enzyme preparations (cellulase, xylanase, β-glucanase) and amylolytic enzymes in 0.005 % concentrations during 3 h. The highest efficiency among tested biopreparations for wheat sprouting was shown by Viscoferm (Novozymes, Denmark) and Compliferm (Institute of Microbiology, NAS Belarus), whereas Viscoferm proved the most active in terms of peas germination.
