Отработанные (пережаренные) растительные масла являются дешевыми и доступными в необходимых для применения в микробных технологиях количествах. Однако при жарке в маслах образуются токсические вещества (ингибиторы синтеза целевого продукта), количество которых зависит от состава масла, в частности от соотношения в нем моно- и полиненасыщенных жирных кислот. Изучен синтез микробного экзополисахарида (ЭПС) этаполана на отработанных маслах с различным соотношением моно- и полиненасыщенных жирных кислот. Культивирование Acinetobacter sp. IМВ B-7005 (продуцент этаполана) осуществляли в жидкой среде, содержащей в качестве источника углерода отработанные масла (5 %), характеризующиеся высоким содержанием как полиненасыщенных (подсолнечное, кукурузное), так и мононенасыщенных (оливковое, рапсовое) жирных кислот. Количество ЭПС определяли весовым методом после осаждения изопропанолом, ЭПС-синтезирующую способность – как отношение концентрации ЭПС к концентрации биомассы. Максимальная концентрация ЭПС (11–14 г/л) наблюдалась при выращивании продуцента на отработанных после жарки мяса подсолнечном и кукурузном маслах с использованием инокулята, выращенного на соответствующем рафинированном масле. Количество этаполана, синтезированного в аналогичных условиях культивирования Acinetobacter sp. ИМВ В-7005 на отработанных рапсовом и оливковом маслах, было ниже (9–10 г/л), однако его ЭПС- синтезирующая способность (10–15 г ЭПС/г биомассы) превышала в 1,6–2,4 раза таковую при применении подсолнечного и кукурузного масел. Возможность синтеза этаполана на отработанном масле любого качества (подсолнечное, кукурузное, рапсовое, оливковое) позволяет не только утилизировать накапливающиеся в больших количествах токсичные отходы, но и разработать универсальную технологию получения этого полисахарида, не зависящую от типа, качества и поставщика отработанного масла. </p></abstract><trans-abstract xml:lang="en"><p>The research on the use of industrial waste to obtain practically valuable microbial metabolites was intensified. Oilcontaining waste are cheap and available in necessary for use in microbial technologies quantities. Nevertheless in the literature there are only a few reports about the possibility of their application as substrates for the biosynthesis of microbial polysaccharides. To investigate the synthesis of exopolysaccharide eрtapolan (produser – Acinetobacter sp. IMV B-7005) on waste (fried) oil of various qualities (with different ratios of mono- and polyunsaturated fatty acids). It was established that the highest ethapolan concentration (11–14 g/l) was observed under Acinetobacter sp. IMV B-7005 cultivation on waste after frying meat sunflower and corn oils at concentration 5 %, with using inoculum grown on refined oils. Replacing these oils in the cultivation medium on olive and rapeseed accompanied by some decrease in EPS concentrations (to 9‒10 g/l), the EPS-synthesizing ability was higher in several times (6.3–7.6 g EPS/ g biomass). The possibility of exopolysaccharide ethapolan biosynthesis on waste vegetable oils, characterized by a high content of polyunsaturated (sunflower, corn) and monounsaturated (olive, rapeseed) fatty acids was shown.</p></trans-abstract><kwd-group xml:lang="ru"><kwd>Acinetobacter sp.
