За весь цикл твердофазного культивирования Pleurotus ostreatus количество сырого протеина в субстрате увеличилось в 3,3 раза, истинного белка – в 2,8 раза, содержание сырой клетчатки снизилось в 3 раза, лигнина – в 1,4 раза. Активность ферментов в субстрате после 2–3 волн плодоношения составила (ед/г субстрата): целлюлазы – 23,4–27,3, марганецпероксидазы – 0,11–0,23, лакказы – 0,87–1,39. Установлено, что скармливание в составе рациона молодняка крупного рогатого скота субстрата вешенки позволяет обогатить рацион животных питательными веществами. Присутствие в отработанном субстрате вешенки комплекса целлюлолитического и лигнинолитического ферментов открывает возможности использования данного субстрата в кормопроизводстве с целью увеличения усвояемости грубых растительных кормов. </p></abstract><trans-abstract xml:lang="en"><p>Content of protein, cellulose and lignin in the straw substrate at different stages of oyster mushroom large-scale cultivation have been investigated. After whole cycle of Pleurotus ostreatus growth in the solid-state culture quantity of crude protein and true protein in the substrate increased 3.3 and 2.8 times respectively. The content of insoluble fibers in the straw decreased 3 times, quantity of lignin reduced 1.4 times. Activity of enzymes in the substrate after 2–3 waves of fructification was the following (U/g): cellulase – 23.4–27.3, manganese peroxidase – 0.11–0.23, laccase – 0.87–1.39.
